Recipe: Strawberries & Cream Choco Ice Pops [VEGAN]

There's nothing like a cold ice pop on a hot summer's day. These healthy, creamy, sweet treats will keep you cool while the sun is shining this summer.

For the ice pops

-1/2 can of coconut cream, shaken

-10 fresh strawberries, leaves cut off

-1 super ripe banana

-1 tbs sweetener of your choice (I used Agave'd Hibiscus Sweetener)

 

For the magic shell

-2 tbs vegan chocolate chips

-1 tbs coconut oil

In a blender, combine the ice pop ingredients. Blend until smooth and thoroughly combined. Portion off mixture into popsicle molds (I used eight small molds, but you can use whatever size and shape you want). Pop in the freezer for at least four hours, or overnight if you have time.

Once your ice pops are frozen, begin mixing your magic shell. In a microwave safe bowl, melt together the chocolate chips and coconut oil. Heat up in thirty second increments until the chips are melted. Mix together with a spoon and set aside. Remove your ice pops from the molds. If you're having trouble getting them out of the popsicle holders, dunk them briefly in a bowl of hot water. Just a couple of seconds is all you'll need! Once you've successfully removed the pops from the molds, place on a sheet of baking paper. Using a spoon, drizzle the ice pops with the chocolate sauce. The chocolate will harden upon touching the frozen pops, creating a crunchy sweet outer shell. Once your pops are drizzled, they're ready to be enjoyed!
