Recipe: Coconut Lime Rice Noodles [VEGAN] [GLUTEN-FREE] [OIL-FREE]

These Coconut Lime Rice Noodles are insanely easy to make and pack a huge punch of flavor. The best part? This meal is totally gluten-free, oil-free, dairy-free, and, of course, is vegan! I made this dish for my two friends who are new vegan and vegetarian converts. They absolutely loved it and one of them even recreated it at home a few days later! I guarantee your friends will love this creamy, limey, Thai-inspired dish as much as I do!

Coconut Lime Rice Noodles

For the sauce

-1 can light coconut cream

-juice of 1 lime

-3 tbs tamari

-1/4 cup ketchup

-1 tablespoon vegan sugar

For the noodles

-1 packet rice noodles (enough to serve two people)

-1 zucchini, sliced

-2 cups shredded carrots

-1 cup extra firm tofu, drained, pressed, and cubed

-1.5 cups green beans

-1 clove garlic, chopped

-green onions, for garnish

-crushed peanuts, for garnish

-mung beans, for garnish

-lime wedge, for garnish

In a small bowl, combine the sauce ingredients. Mix thoroughly with a fork and set aside. Start a pot of water boiling on the stove. Add rice noodles once the water is boiling and cook the noodles according to the package instructions.

While your rice noodles are cooking, saute the zucchini, garlic, green beans, tofu and carrots with a bit of water in a pan. Once the vegetables are tender and the rice noodles are cooked, combine together in the pan. Pour your sauce over the noodles and sautée together until the sauce has thickened and warmed. Serve on a plate garnished with crushed peanuts, mung beans, and a lime wedge. Enjoy!
