Trust me, the title of this post is misleading! Raw vegan cashew cheese is actually insanely simple and so delicious! I don't know about you, but I used to be intimidated by anything that was raw, especially raw recipes that used nuts. It always seemed so time consuming and finicky, I just never wanted to try it.
I'm currently in a phase of my life where I'm trying to get over my strange mental blocks to prove that I can do the things that once seemed difficult. One night I made a homemade spicy chili and knew that a "cheese" was necessary to cut the heat and add a nice creamy dimension to the meal. That's when this raw vegan cheese recipe was born, and I've made it a million times since then.
This recipe is so easy and addicting, you'll want it everyday!
Raw Vegan Cashew Cheese
-1 cup raw, unsalted cashews (soaked in water for at least thirty minutes)
-1 tablespoon nutritional yeast (not technically raw but many raw recipes still call for it anyway)
-2 tablespoons fresh lemon juice
-1/4 cup water
-salt & pepper to taste
Start by soaking the cashews for at least thirty minutes in a bowl of water. The longer you soak them, the creamier the cheese will be. Drain the cashews. Combine all ingredients in a blender and blend until smooth. You may need to scrape the cashew mixture down from the sides of the blender a couple times to make sure everything gets blended together. Serve on soups, sandwiches, pastas, and toast!
