Something about the fragrance of sizzling onions in olive oil and tomato sauce bubbling gently in a pan transports me back to my piccolo appartamento in the heart of Firenze. Homemade pasta and sauce makes me feel cozy and warm--it's the ultimate rainy day comfort food. This tomato sauce recipe is exceptionally easy to make, is completely vegan, cruelty-free, soy-free, nut-free, and gluten-free. It works well as a base to which you can add your own flavors of choice. Like a little spice? Amp up the red chili flakes. Prefer something creamier? Blend this all up with boiled cauliflower. Keen for a little more green? Chop up fresh spinach and basil for an extra health punch. My Basic & Easy Tomato Pasta Sauce is really customizable, so make it according to what you like.
Basic & Easy Tomato Sauce
-half of a brown onion, chopped
-two cloves of garlic, chopped
-2 Roma tomatoes, diced
-1 tbs Extra Virgin Olive Oil
-1-680 gram jar of pure tomato puree (passata pomodoro)
-salt & pepper to taste
-optional add-ins: dried oregano, basil, spinach, red chili flakes, veggies
Heat a medium-sized sauce pan on the stove until warm. Slowly pour in the Extra Virgin Olive Oil. Next, add in the chopped onion. Stir frequently for 2 minutes. Then, add in the chopped garlic. Stir onion and garlic together until the onions have become nearly translucent and the garlic is fragrant and tender. Next, add in the chopped tomatoes, stirring frequently for another 1-2 minutes. Pour in the tomato puree and let simmer for about 20 minutes, stirring every once in a while. Add in any additional spices you would like. I always do a bit of salt and pepper with a dash of dried oregano and red chili flakes.
